{"id":182,"date":"2018-12-05T21:44:24","date_gmt":"2018-12-05T20:44:24","guid":{"rendered":"http:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/?p=182"},"modified":"2018-12-05T22:33:16","modified_gmt":"2018-12-05T21:33:16","slug":"foodie-gifts-for-the-festive-season","status":"publish","type":"post","link":"https:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/uncategorized\/foodie-gifts-for-the-festive-season\/","title":{"rendered":"Foodie Gifts for the Festive Season"},"content":{"rendered":"<p>In the quest to buy less; to enjoy a \u2018crap free Christmas\u2019 as one campaign has it, or simply to reduce the amount of \u2018things\u2019 we buy people, you could do worse than consider a foodie gift.\u00a0 I like Christmas.\u00a0 I don\u2019t want to do away with the festivities, the time and investment in family, the things we spend time doing which we don\u2019t make for the rest of the year. But I want a simpler, less commercial Christmas.<\/p>\n<p>I cook for a living, so you may think it\u2019s easier for me to knock up a food gift.\u00a0 Quite the opposite is true. As one of my busiest times of year it can be difficult to make time for present creation as well as the usual Christmas produce.\u00a0 I do try and make some time for this if I can, though I also buy in food gifts from other small local suppliers.\u00a0 It all helps to keep money in the local economy, support local indie businesses and avoid unwanted gifts going into landfill.<\/p>\n<p>Some of my most popular festive gifts are as follows: fudge, brownies, Christmas cakes and puddings, speciality breads such as Panettone or Stollen and Biscotti.\u00a0 Pickles, flavoured vinegars and oils, marmalade, jams and curds also go down well.\u00a0 If the person you want to make something for doesn\u2019t have a sweet tooth, cheese sticks, olive balls and marinated cheese balls all make tasty treats and are easy to make.<\/p>\n<p>Chose something that suits your skill set and available time and you\u2019ll have a festive treat to wrap in no time.\u00a0 In fact, you can spare the gift wrapping and dress up a nice glass jar with a bow or a cloth top, some cinnamon sticks or star anise.\u00a0 You can also buy coloured Kilner-style jars, which look festive without having to do too much else to them; the bonus is a reusable container that isn\u2019t going to add to the mountain of plastic waste we already have.<\/p>\n<p>If you really can\u2019t face making something, don\u2019t have the time, or don\u2019t feel confident, a homemade \u2018kit\u2019 gift could hit the spot instead.\u00a0 Gather together the ingredients to make shortbread, or cheese straws, or your own favourite recipe (minus any fresh ingredients) put it in a jar with the recipe, and hey presto, a foodie gift and a cooking experience in one.\u00a0 Last year I made up my double chocolate brownie recipe into gift jars and it was very popular.<\/p>\n<p>If the person you\u2019re buying from isn\u2019t someone who would appreciate a \u2018do it yourself\u2019 food kit, then seek out local suppliers who are making foodie gifts for Christmas.\u00a0 Your chosen recipient is bound to be delighted with something with local provenance that they are unlikely to find in the high street shops.<\/p>\n<p>Christmas can be a time of over indulgence, of course, but a judiciously chosen food gift, which can be eaten out-with the festivities, is sure to please.\u00a0 If you know someone likes cheese or some other food you could always assemble a hamper of deli items.\u00a0 This makes a great gift if you\u2019re staying with people over Christmas and want to contribute to the household in some way, and makes a change from a bottle of wine.<\/p>\n<p>If you fancy having a go at making a food gift for Christmas I\u2019ve given a few ideas and the recipes below.\u00a0 These won\u2019t take too much time or skill, nor will they break the bank.\u00a0 I hope you enjoy making your edible presents as much as your recipient enjoys consuming them.<\/p>\n<p><strong>Gingerbread Syrup<\/strong><\/p>\n<p>I love ginger, and always include it in Christmas baking.\u00a0 This recipe only takes a few minutes and can be used on ice cream, in drinks, and used to flavour dessets.<\/p>\n<p>Ingredients<\/p>\n<p>300g golden caster sugar<\/p>\n<p>1 tbsp ground ginger<\/p>\n<p>1 cinnamon stick<\/p>\n<p>200 ml water<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Put the golden caster sugar, 200ml water and ground ginger into a saucepan. Add the cinnamon stick and bring to a gentle boil<\/p>\n<p>Simmer for 5 mins until the sugar has dissolved.<\/p>\n<p>Pour into a 500ml sterilised bottle<\/p>\n<p>Decorate with a cinnamon stick and ribbon if you like.<\/p>\n<p>Will keep for a year.<\/p>\n<p><strong>Note<\/strong>:To sterilised the bottle wash in hot soapy water then place on a baking tray and put\u00a0in \u00a0a low oven for 10 mins or until completely dry,\u00a0 You can use a dishwasher on a hot setting if you have a lot of bottles and jars to sterilise.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Spiced Mixed Nuts<\/strong><\/p>\n<p>This takes 15 \u2013 20 minutes to bake but no time to assemble.\u00a0 It produces a sweet\/savoury nibble and keeps well in an airtight jar.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 tbsp sunflower oil<\/p>\n<p>1 tsp ground cinnamon<\/p>\n<p>\u00bd tsp mixed spice<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>400g mixed nut, unsalted and unroasted. Cashews and almonds work well.<\/p>\n<p>2 tbsp honey<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Heat oven to 140C\/120C fan\/gas<\/p>\n<p>Mix the oil with the spices an salt, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.<\/p>\n<p>Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins.<\/p>\n<p>Allow to cool completely then pack into a glass jar.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Chorizo Jam<\/strong><\/p>\n<p>This appeared in a recipe magazine a few years ago that I have a subscription to.\u00a0 I\u2019ve adapted it slightly. It\u2019s very easy to do but takes more time than the other recipes. Makes 2xLB jars.-<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>500g cooking chorizo, diced<\/p>\n<p>1 large white onion , finely sliced<\/p>\n<p>2 garlic cloves, crushed<\/p>\n<p>\u00bd tspn dried thyme<\/p>\n<p>80g light brown sugar<\/p>\n<p>3 tbsp red wine vinegar<\/p>\n<p>2 tbsp maple syrup<\/p>\n<p>1 tbspn soy or tamari in 100ml water.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Saute the Chorizo in a wide frying pan for about 5 mins until golden and crispy at the edges. Remove the chorizo with a slotted spoon and transfer to a plate, leaving the oil that has been released in the pan.<\/p>\n<p>Turn the heat down low and gently cook the onion in the chorizo oil for 15-20 mins or until very soft and starting to brown. Stir in the garlic, muscovado sugar, Sherry, maple syrup, soy water and chorizo.<\/p>\n<p>Cook slowly for 35-40 mins, stirring occasionally, until thick and syrupy. Turn off the heat, leave to cool a little, then tip everything into a food processor.
