{"id":69,"date":"2017-09-12T18:03:01","date_gmt":"2017-09-12T17:03:01","guid":{"rendered":"http:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/?page_id=69"},"modified":"2017-09-12T18:41:08","modified_gmt":"2017-09-12T17:41:08","slug":"caramelised-chicory","status":"publish","type":"page","link":"https:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/caramelised-chicory\/","title":{"rendered":"Caramelised Chicory"},"content":{"rendered":"<p>Serves 2 as a starter or side dish.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n25g butter<br \/>\n4 heads green or red chicory, trimmed and halved lengthways<br \/>\n2 tsp clear honey<br \/>\n\u00bd large orange, juice only<br \/>\nSalt and freshly ground black pepper<\/p>\n<p><strong>Method<\/strong><br \/>\nPreheat the oven to 180C\/350F\/Gas 4.<br \/>\nRub half the butter quite thickly over the bottom of an ovenproof dish.<br \/>\nPack the chicory halves, in a single layer, into the dish.<br \/>\nDrizzle over the honey and orange juice and season with salt and freshly ground black pepper.<br \/>\nDot with the remaining butter.<br \/>\nTransfer to the oven and cook, uncovered, for about an hour, turning and basting the chicory every so often.<br \/>\nKeep an eye on things towards the end of the cooking time so you don\u2019t end up with burnt chicory.<br \/>\nTake the dish out of the oven when the juices have reduced to a few spoonfuls of thick syrup and the chicory is looking suitably caramelised.<\/p>\n<p>Serve warm as a side dish or sprinkle with walnuts towards the end of cooking and serve as a main course.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Serves 2 as a starter or side dish.
