{"id":222,"date":"2021-02-17T15:24:57","date_gmt":"2021-02-17T14:24:57","guid":{"rendered":"http:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/?page_id=222"},"modified":"2021-02-17T19:03:03","modified_gmt":"2021-02-17T18:03:03","slug":"savoury-leek-and-mushroom-cornbread-pudding","status":"publish","type":"page","link":"https:\/\/www.highlandhomecook.co.uk\/scrapingthebowl\/savoury-leek-and-mushroom-cornbread-pudding\/","title":{"rendered":"Savoury Leek and Mushroom Cornbread Pudding"},"content":{"rendered":"\n<p>This savoury custard recipe is great for using up stale bread.&nbsp; In this case cornbread, which works well and is a gluten free option, although you can use any bread you have.<\/p>\n\n\n\n<p>Serves 4<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>Around 6 slices of cornbread crumbled<\/p>\n\n\n\n<p>500 ml Milk<\/p>\n\n\n\n<p>2 eggs beaten<\/p>\n\n\n\n<p>50g cheese<\/p>\n\n\n\n<p>1 leek cleaned and chopped<\/p>\n\n\n\n<p>100g mushrooms<\/p>\n\n\n\n<p>1tsp Dijon Mustard<\/p>\n\n\n\n<p>Salt &amp; pepper<\/p>\n\n\n\n<p>1\/2 tsp Paprika<\/p>\n\n\n\n<p>1\/2 tsp thyme<\/p>\n\n\n\n<p>Butter or spread for greasing<\/p>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Fry the leeks and mushrooms in olive oil and set aside<\/p>\n\n\n\n<p>Grease a medium oven dish and crumble the bread into it.<\/p>\n\n\n\n<p>Beat the eggs and milk together<\/p>\n\n\n\n<p>Add the herbs and seasonings to the liquid along with the cooled veg and pour over the breadcrumbs<\/p>\n\n\n\n<p>Leave to soak for at least 30 minutes.&nbsp; You want the bread to soak up the liquid before you bake it.<\/p>\n\n\n\n<p>Sprinkle the cheese over the top.&nbsp; Place the dish in a tray of boiled water and bake at around 180C \/160C fan Gas 4 for 30 &#8211; 40 minutes.<\/p>\n\n\n\n<p>The pudding should be brown on top and puffy.<\/p>\n\n\n\n<p>Photo shows leftover cornbread fried for breakfast<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This savoury custard recipe is great for using up stale bread.&nbsp; In this case cornbread, which works well and is a gluten free option, although you can use any bread you have.
